Mediterranean Smash Tacos

Recipe Information:
Makes 4-6 servings

Ingredients:
For the Mediterranean salad topping:
1 cup chopped cucumber
1 cup halved cherry tomatoes
¼ cup diced red onion
1–2 Tbsp crumbled goat cheese
Juice of ½ a lemon (~1 Tbsp)
~1 Tbsp extra virgin olive oil
1 tsp coarse sea salt
1 tsp freshly ground black pepper
For the beef:
1 lb extra lean ground beef
1 Tbsp minced garlic
Juice of ½ a lemon (~1 Tbsp)
1 tsp dried oregano
1 tsp fine sea salt
1 tsp ground black pepper
1 tsp garlic powder
2 tsp onion powder
Optional: chopped fresh herbs like parsley or mint
To serve:
Taco-sized corn or flour tortillas
Hummus
Tzatziki
Recipe:
In a medium bowl, combine chopped cucumber, cherry tomatoes, red onion, goat cheese, lemon juice, olive oil, salt, and pepper. Toss to combine and let sit while preparing the rest of the recipe.
Combine the ground beef with herbs and spices in a bowl. Smash a moderate amount of the beef mixture onto each tortilla, enough to fit the span of the tortilla in a relatively thin layer.
In a skillet over medium-high heat, cook the tortillas with ground beef - starting with the beef side down (~5 minutes). Flip and repeat until cooked to your preference.
Spread a spoonful of hummus, tzatziki, and Mediterranean salad on top of each smash taco. Enjoy!

Cucumber: cucumbers are packed with vitamin K, which is essential for blood clotting and bone health! They're also a great source of fiber, vitamin C, vitamin B, copper, phosphorus, potassium, magnesium, and water for hydration!
