Chili Lime Salmon Tacos with Avocado Mash

& my favorite for fish tacos - a simple yogurt sauce!

Recipe Information:
Makes 4-5 tacos
Preparation time: 20 minutes
Total time: 20 minutes
Ingredients:
For the salmon:
1/2 tbsp paprika
2 tsp garlic powder
2 tsp onion powder
1 lb salmon, skinned and chopped into 1-inch cubes
For the avocado mash:
1 large avocado
A sprinkle of ground pepper
A squeeze of lime
For the yogurt sauce:
2 Tbsp Greek yogurt
A sprinkle of fine salt
A small squeeze of lime
For the tacos:
Tortillas, warmed up on stove
1 Persian cucumber, sliced
Shredded green cabbage
Squeeze of lime
Recipe:
For the salmon:
Mix all spices together in a medium sized bowl.
Place skinned salmon cubes into bowl. Use your hands or a fork to fully and evenly coat salmon cubes in spice mix.
Add spiced salmon cubes to air fryer in a single layer.
Air fry the salmon cubes at 380 degrees F for 7-10 mins (I find that 8 mins is my perfect salmon!) No need to preheat or flip salmon during cooking. Once done, salmon should flake easily with a fork.
For the avocado mash:
Place all ingredients into a small-medium bowl. Use a fork to thoroughly mash all ingredients together until avocado becomes smooth-ish (lumps are okay, but should all be well combined together). Taste and adjust flavors to your preferences.
For the yogurt sauce:
Place all ingredients into a small bowl. Use a fork or spoon to thoroughly combine until the sauce is smooth and cohesive. Taste and adjust flavors to your preferences. Add extra lime juice, milk, or water if you prefer a thinner sauce.
For the tacos:
Assemble the tacos! Add the salmon, avocado mash, and yogurt sauce to the warmed tortillas. Top with cucumber slices, shredded cabbage, and an additional squeeze of lime - enjoy!
Nutrition:
Salmon: salmon is full of healthy fats, selenium, B vitamins, niacin, pantothenic acid, thiamin, and phosphorus. These all contribute to a healthy body! The essential omega-3 fatty acids in salmon are super anti-inflammatory and extremely heart healthy, as well. Salmon is an awesome high-quality protein source!
Avocado: HEART HEALTHY FATS!! Avocado contains lots of monounsaturated and polyunsaturated fats (MUFAs and PUFAs), which reduce cholesterol and triglycerides.
Cucumber: cucumbers are packed with vitamin K, which is essential for blood clotting and bone health! They're also a great source of fiber, vitamin C, vitamin B, copper, phosphorus, potassium, magnesium, and water for hydration!
Greek yogurt: greek yogurt is a great source of protein, vitamin B12, riboflavin, and selenium! It's also great for gut health, bones, and supporting muscle recovery.
Cabbage: cabbage is high in dietary fiber, vitamin K (needed for blood clotting), vitamin C (great for immunity), and folate (awesome for cell division + preventing anemia)!
