Strawberry Cheesecake Bites

Recipe Information:
- Makes ~20 cheesecake bites 
- Total time: 10-15 minutes 
Ingredients:
- 16oz fresh strawberries, rinsed and dried off (about a pound, or a typical sized carton of strawberries) 
- 4 oz light cream cheese at room temperature (slightly softened) 
- 1/4 cup powdered sugar 
- A splash of vanilla extract 
- ~1/4 cup of graham cracker crumbs 
Recipe:
- Using a pairing knife, cut off the tops/stems of the strawberries. Use the same knife to gently hollow-out the strawberry, creating a cavity within each fruit. 
- In a medium bowl using a whisk or fork, cream together the cream cheese, powdered sugar, and vanilla extract until well combined. 
- Place the cream cheese mixture into a Ziploc bag, using scissors to snip off the bag’s corner and create a piping bag. Pipe a small amount of the filling into each strawberry, enough to fill the cavity! *You can alternatively use a spoon or knife to fill each strawberry by hand! 
- Dip the cream cheese side of each filled strawberry into the graham cracker crumbs to fully coat. Place on a plate and serve cold!
