Brown Sugar Banana Nut Bread

Love this twist on my classic banana bread!

Recipe Information:
- Makes ~8 servings (one loaf pan) 
- Preparation time: 10 minutes 
- Total time: 1 hour & 10 minutes 
Ingredients:
- 1 stick unsalted butter, softened 
- 3-4 very ripe bananas (the mushier, the better... & mashed!) 
- 2 eggs 
- 1 1/4 cup flour 
- 1/2 tsp salt 
- 1 tsp baking soda 
- 1 Tbsp ground cinnamon 
Recipe:
- Preheat oven to 350 degrees F. Prepare a loaf pan with a small amount of olive oil or line with parchment paper. 
- In a large mixing bowl, cream together butter and sugar until well combined and fluffy, about 2 minutes. Add mashed bananas and eggs, continuing to mix until fully mashed and incorporated. 
- Slowly stir in the flour, salt, baking soda, and cinnamon until no dry spots remain. 
- Add chopped pecans to the batter and fold in until just incorporated. 
- Evenly pour batter into prepared loaf pan and place on the center rack of the oven. Bake for one hour, or until a toothpick inserted in the center comes out clean. Allow to cool and enjoy!
