Chocolate Crinkle Cookies

Recipe:

  1. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.

  2. In a separate elecrtric mixing bowl fitted with the paddle attachment, combine the cocoa powder, granulated sugar, oil, eggs, and vanilla extract. Mix on medium speed until smooth.

  3. Gradually add the flour mixture into the mixing bowl. Once all of the flour mixture is added in, mix on low-medium speed until it is fully incorporated and no dry spots remain. The dough will be on the thinner side, a little bit soupier than typical cookie dough!

  4. Cover the dough and place in the refrigerator overnight. Can chill for as little as 4 hours, or up to 2 days!

  5. When you are ready to bake, preheat the oven to 350 degrees F and prepare a baking sheet with parchment paper.

  6. In a shallow bowl or large plate, place the powdered sugar. Scoop and shape dough balls ~2 inches wide, before placing them in the powdered sugar. Roll the balls in the sugar until they are completely covered. Place the sugared balls onto the prepared baking sheet about 3 inches apart from each other.

  7. Bake cookies for 10-12 minutes, until cracks have formed and the edges appear dry. The middle should look a bit underdone, it will set once out of the oven!

  8. Remove the cookies from heat and allow to set on the baking sheet for 10-20 minutes. Enjoy once cool!
