Jalapeño BBQ Chicken Grilled Cheese Sandwich

Ingredients:

Recipe:

  1. Cook ground chicken as normal. Just before fully cooked, lower heat to low and add barbecue sauce to pan. Stir to fully coat chicken and finish cooking to completion. Remove from heat and set aside.

  2. To assemble sandwich, place barbecue chicken in between two slices of sourdough bread. Sprinkle jalapeño and red onion on top of chicken. Layer Swiss cheese on top and sprinkle in cheddar cheese, as well. Close sandwich.

  3. In a medium pan over medium heat, grill sandwich until both sides are golden and the filling is melted. Remove from heat and enjoy!


Nutrition:

  • Sourdough bread: the fermentation process of sourdough makes it more digestible than many other bread types (great for the gut)!! It also delivers iron and folate from its fortified flour and packs in vitamin B12, which is usually only found in animal foods!

  • Jalapeño: jalapeños contain an antioxidant called carotene, which fights damage to the cells. They also contain antimicrobial and antibacterial properties, helping to keep us healthy by slowing the growth of bacteria and infections. Jalapeños are a great source of vitamin A, vitamin C, and potassium, as well.
