Mediterranean Salad Bowl with Lime Tzatziki Sauce

This salad is so refreshing and delicious on a warm day! With minimal ingredients, it is so easy to make and enjoyable to eat. Read below for the recipe and nutrition information!
Recipe Information:
- Makes 1 serving 
- Total time: 20 minutes 
Ingredients:
For the salad bowl:
- Arugula 
- Grilled chicken breast, chopped into bite size pieces 
- Desired seasonings for chicken: salt, pepper, garlic powder, and paprika 
- Chopped red onion 
- Sliced cucumber 
- Diced tomato 
For the lime tzatziki dressing:
- 1 Tbsp Greek yogurt, plain and unsweetened 
- 2 tsp extra virgin olive oil 
- 2 tsp lime juice 
- 1 garlic clove, crushed 
- 2 tsp dill weed 
Recipe:
- Cook and dice chicken breast as desired. Mine is seasoned with salt, pepper, garlic powder, and paprika! 
- In a medium bowl, layer arugula, grilled chicken, red onion, cucumber, tomato, and feta cheese. 
- For the dressing: blend or mix to combine all ingredients! If dressing is too thick, feel free to add a small amount of water or more lime juice to thin it out. 
- Enjoy!

- Cucumber: cucumbers are packed with vitamin K, which is essential for blood clotting and bone health! They're also a great source of fiber, vitamin C, vitamin B, copper, phosphorus, potassium, magnesium, and water for hydration! 
- Tomato: tomatoes are rich in vitamin C and potassium! They contain an antioxidant called lycopene, which is linked to many benefits including a reduced risk of heart disease and certain cancers.
