Red Velvet Cake Mix Cookies

Recipe Information:

• Makes 14-16 cookies

• Preparation time: 10 minutes

• Total time: 20 minutes

Ingredients:

• Red velvet box cake mix of choice (between 13 - 15 ounces)

• 1/3 cup canola oil

• 2 eggs

• *Optional 1/2 cup dark or semi-sweet chocolate chips

Recipe:

1. Preheat oven to 350 degrees F and prepare 2 baking sheets with parchment paper.

2. In a large bowl, combine all ingredients with a whisk or spoon until fully combined, with no dry spots remaining!

3. Create dough balls ~2-3 inches wide. Place on the prepared baking sheets ~3 inches apart from each other.

4. Bake cookies at 350 deg F for 10 minutes. The edges should appear mostly dry, and the middles should look a bit undercooked!

5. Remove cookies from the oven and allow to set on the pan for at least 10 minutes. Cool and enjoy!
